Summer Spicy Lime Pork with Snow Pea & Asparagus Salad

A flavoursome fresh meal with vibrant summer ingredients... Snow Peas, Asparagus and Cucumber.


  • Suncoast Limes Lime Salt
  • Noosa Chilli Hot and Sweet Sauce
  • 4 Pork Loin Cutlets
  • Olive Oil
  • 200g Snow Peas
  • 1 bunch of asparagus cut into 4cm lengths
  • 1 cucumber, halved and sliced thinly
  • 1 cup of fresh coriander leaves
  • 1 tbs fresh lime juice
  • 1bs fresh orange juice
  • 1bs rice wine vinegar
  • 2tsp honey


Season both sides of the pork with your desired amount of Noosa Chilli’s Hot and Sweet Sauce and a generous sprinkling of Suncoast Limes’ Lime Salt. Lightly grease a non stick frying pan with olive oil and place on medium heat. Add the pork and cook for 4-5 minutes each side or until cooked to your liking. Transfer to a plate and cover loosely with foil. Set aside for 2-3 minutes to rest.

Cook the snow peas and asparagus in a saucepan of boiling water for 1-2 minutes or until bright green and tender crisp. Refresh under cold running water. Drain. Combine the snow pea mixture, cucumber and half the coriander in a bowl.

Whisk together the lime juice, orange juice, vinegar, honey and remaining coriander. Season with pepper. Divide the pork and salad among serving dishes. Drizzle over the dressing to serve. If you’re after more spice replace the honey with your desired amount of Noosa Chilli’s Hot and Sweet Sauce in the dressing.
